New kids on the Gumbo Block take 2nd place at GumboFest in Annapolis.
CSG had a great showing with their Traditional Style New Orleans Cajun Gumbo and bonus Bananas Foster. Easily a crowd favorite, CSG boasted the largest line of Gumbo afficianados with patrons often coming back for seconds, thirds, and even fourth helpings.
In attendence from CSG was Michael Sudine, Head Chef (ATK), Ryan Warnick, Cook in training (ATK), Will Clark, Director of Food Service (ATK), Chris Coil, Director of Food Service (Encore), John Dressel, Director of Food Service (Springwell), Ezra Countiss, Corporate Chef (CSG Corp.), Denise Greenfield, AP Coordinator (CSG Corp.), Terra Valway, Director of Finance (CSG Corp.), and Rich Valway, President (CSG Corp.) Ashley and Brandon Valway were there to support the team as well.
In a fundraising benefit for Friends of the Lighthouse Shelter (an organization which gives shelter and aid to the homeless as well as job training and counciling), CSG competed against 11 other teams of chefs all vying for the title of Best Gumbo. In a stellar showing CSG team takes 2nd place. “That was the best, most authentic Cajun Gumbo by far”, says George St. Pierre, a Gumbo Enthusiest and New Orleans native. “If the Judges really knew what Gumbo was CSG would have won hands down”.
Despite taking second CSG is very pround of their showing in their first ever competition event and of their Award Winning Gumbo. Michael Sudine and Will Clark of ATK fine tuned the CSG Gumbo entry over a 6 week period tweaking things here and there. The final product consisted of Andouille Sausage, Crawfish, White Tiger Shrimp, Blue Crab, and a Sassafras Marinated Chicken. All this was cooked with a Mahogany Roux and a house made Seafood Stock. “This gumbo would bring Justin Wilson back from the dead just to have a bite…”, says Ryan Warnick, “…it was that good”.
In the near future CSG will be competing in an ICF sanctioned Chili Cookoff in Mt. Airy, Maryland. CSG looks forward to bringing home a trophy from that event as well. This is only the first in a long run of victories to come.
