Vegan Tacos

March is National Nutrition Month! Now is a great time to focus on making better-informed food choices and developing sound eating habits. It’s also a great time to incorporate more physical activity into your daily routine.

An easy way to start is to try adding more plant-based meals to your menus. A plant-based diet can be highly nutritious when followed correctly. Studies show it may reduce the risk of chronic diseases, and aid in weight loss. Plant-based diets tend to be rich in nutrients and low in saturated fats. This diet may improve heart health, protect against cancer, and lower the risk of type 2 diabetes.

Vegan Tacos

 

Ingredients

1/4 Cup Water
1 Lime
1 Tbsp Maple Syrup
2 1/2 Tbsp Chili Powder
2 tsp Liquid Smoke
2 tsp Smoked Paprika
1 tsp Cumin
1 tsp Garlic Powder
1 tsp Onion
1 Sweet Potato, Shredded
8oz Tempeh
3 Tbsp Soy Sauce
Tortillas

 

Steps

  1. Mix water, lime juice, maple syrup, chili powder, liquid smoke, smoked paprika, cumin, garlic powder, and onion powder. Set aside.
  2. Heat oil and add tempeh, breaking up the tempeh as it cooks. Cook until golden, about 3 minutes.
  3. Fold in sweet potatoes, adding the soy sauce. Cook until sweet potatoes begin to soften, about 4 minutes.
  4. Add sauce mixture and let it continue to heat and thicken, about 3 minutes.
  5. Serve with tortillas of your choice. Add toppings (example: avocado and pickled red onions).
