March is National Nutrition Month! Now is a great time to focus on making better-informed food choices and developing sound eating habits. It’s also a great time to incorporate more physical activity into your daily routine.
An easy way to start is to try adding more plant-based meals to your menus. A plant-based diet can be highly nutritious when followed correctly. Studies show it may reduce the risk of chronic diseases, and aid in weight loss. Plant-based diets tend to be rich in nutrients and low in saturated fats. This diet may improve heart health, protect against cancer, and lower the risk of type 2 diabetes.
Our recipe for the month of March was submitted by our Talent Acquisition Manager, Beth Weixel.
Vegan Tacos
Ingredients
1/4 Cup Water
1 Lime
1 Tbsp Maple Syrup
2 1/2 Tbsp Chili Powder
2 tsp Liquid Smoke
2 tsp Smoked Paprika
1 tsp Cumin
1 tsp Garlic Powder
1 tsp Onion
1 Sweet Potato, Shredded
8oz Tempeh
3 Tbsp Soy Sauce
Tortillas
Steps
- Mix water, lime juice, maple syrup, chili powder, liquid smoke, smoked paprika, cumin, garlic powder, and onion powder. Set aside.
- Heat oil and add tempeh, breaking up the tempeh as it cooks. Cook until golden, about 3 minutes.
- Fold in sweet potatoes, adding the soy sauce. Cook until sweet potatoes begin to soften, about 4 minutes.
- Add sauce mixture and let it continue to heat and thicken, about 3 minutes.
- Serve with tortillas of your choice. Add toppings (example: avocado and pickled red onions).
