Sunshine, warmer temperatures, and outdoor gatherings mean just one thing, grilling season is here! It’s time to get out of the kitchen and take advantage of the convenience of grilling and enjoy getting outside. Grilled meats and vegetables retain more nutrients and when you eat grilled foods you consume less fat and sodium.
Our recipe for June is all about the grill, lean protein, and Thai-inspired flavors. Thai cuisine is known for being fresh-tasting, spicy, tart, and sweet. These chicken skewers are packed with flavor and you can kick up the spice by adding more chili sauce. Plus, who doesn’t love eating food on a stick?
Thai-Inspired Grilled Chicken Skewers
Ingredients
1/4 Cup Chopped Cilantro
4 Garlic Cloves
2 Tbsp Dark Brown Sugar
1/4 Cup Soy Sauce
2 Tbsp Fish Sauce
1 Tbsp Sesame Oil
1 Tbsp Hot Chili Sauce
1/4 Cup Vegetable Oil
1/4 Cup Rice Vinegar
6 Boneless Skinless Chicken Thighs
Yield: 18 Skewers
Steps
1) Soak 18 bamboo skewers in water for at least 1 hour.
2) Wash cilantro and clean leaves from stems. Peel the garlic cloves.
3) Finely chop cilantro and garlic and set aside. Combine the rest of the ingredients in a blender (except for the chicken). Blend until well combined. Stir in cilantro and garlic.
4) Cut chicken into strips (trim excess fat) and thread skewers through the chicken. Repeat until all chicken has been skewered.
5) Place skewered chicken in a baking dish where it can lay flat. Pour marinade over chicken and marinate in the
refrigerator for up to 2 hours.
6) Preheat an outdoor grill to 400F. Grill chicken on skewers, turning once. Allow the chicken to develop deep color on the grill but not burn. Cook until internal temp is 165F.
7) Serve with a peanut or satay dipping sauce. Can also be served chilled over a noodle salad.
