Greek Yogurt Tzatziki Dip
Ingredients
1 Cucumber
2 Cloves of Garlic, peeled and minced
2 Tbsp Fresh Mint, chopped
2 Tbsp Olive Oil
2 1/2 Cups Plain Greek Yogurt
1 tsp Salt
1 Lemon
Steps
1) Wash the cucumber. Split lengthwise and remove the seeds. Using a box grater, shred the cucumber on the large grate side. Squeeze the cucumber, draining as much liquid as possible. Set drained, shredded cucumber in a medium bowl.
2) Add yogurt, oil, mint, and garlic to bowl of cucumber. Stir well.
3) Squeeze half of the lemon into the yogurt and add salt. Stir to combine and taste. Allow the dip to chill, covered, in the refrigerator at least 2 hours before serving or overnight. Stir well before serving.
4) Serve with grilled meats and vegetables, pita chips, raw vegetables, and on turkey or chicken burgers.
