Pumpkin Spice Baked Oatmeal

The official flavor of fall has arrived. It’s pumpkin spice season! Pumpkin spice is versatile and can be used to add a warm flavor to a variety of foods — often in combination with pumpkin puree.

There are countless pumpkin recipes available for every meal of the day but our favorite is breakfast. This Pumpkin Spice Baked Oatmeal will start your day the right way and is perfect for chilly mornings. It’s like enjoying pumpkin pie for breakfast, only healthier.

 

 

Ingredients

2 Bananas, overripe
1/2 Cup Pumpkin Puree
2 Tbsp Maple Syrup
1 1/4 tsp Cinnamon, divided
1 tsp Vanilla Extract
1/4 tsp Nutmeg
1/4 tsp Ginger
1/8 tsp Cloves
1/2 tsp Baking Powder
1/4 tsp Kosher Salt
3/4 Cup Cashew, Almond, or Skim Milk
1 1/2 Cups Old Fashioned Oats
1 tsp Sugar

 

Steps

  1. Preheat the oven to 375F. Spray a small baking dish with cooking spray.
  2. Add the bananas to the bottom of a mixing bowl, and mash them with a fork.
  3. Add the pumpkin, maple syrup, 1 tsp of cinnamon, baking powder, salt, nutmeg, ginger, cloves, and vanilla extract to the mixing bowl, and stir to combine.
  4. Add in the milk and whisk together.
  5. Add the oats and fold them in.
  6. Pour the mixture evenly into the baking dish.
  7. In a small bowl, combine the remaining 1/4 tsp cinnamon with 1 tsp sugar. Sprinkle this mixture evenly on top of the oats.
  8. Bake at 375F for 35 minutes.
