Sheet Pan Chicken Fajitas
Ingredients
1½lbs Chicken Breast, sliced
3 Bell Peppers, thinly sliced
1 Yellow Onion, thinly sliced
2 Garlic Cloves, minced
3 Tbsp Olive Oil
1 Lime
Fresh Cilantro, chopped
8-10 Small Flour or Corn Tortillas
Seasoning
1 Tbsp Chili Powder
1½ tsp Paprika
1½ tsp Ground Cumin
½ tsp Onion Powder
½ tsp Garlic Powder
¼ tsp Dried Oregano
¼ tsp Cayenne Pepper (optional)
Salt and Black Pepper
Steps
1) Preheat oven to 425°F and line or lightly grease a sheet pan.
2) Slice 1½ lbs chicken, 3 bell peppers, and 1 yellow onion. Mince 2 cloves garlic.
3) Combine the seasonings.
4) Place the chicken, peppers, onion, and garlic on the sheet pan. Drizzle with 3 Tbsp olive oil, add the seasoning, and toss to coat. Spread into an even layer.
5) Bake for 15–20 minutes, or until the chicken reaches 165°F.
