Chicken with Creamy Mustard Sauce

Ingredients
8 Chicken Thighs, skin on
3 Tbsp Vegetable Oil
2 Cups Yellow Onion, sliced
2 Tbsp White Wine, dry
8 Ounces Crème Fraiche
1 Tbsp Dijon Mustard
1 tsp Whole Grain Mustard
1Tbsp Fresh Parsley
Salt and Pepper to taste

Steps
1. Clean and dry your chicken, season with salt and pepper on both sides.
2. Coat a large frying pan with vegetable oil. Heat the pan over medium heat and place chicken, skin side down, in pan for 15 undisturbed minutes.
3. Flip the chicken and add onions to the pan. Cook for an additional 10-15 minutes, until chicken reaches 165 degrees.
4. Transfer chicken to a plate and leave the onions in the pan.
5. Add the wine, crème fraiche, and both mustards to the pan with the onions. Stir until combined and season with salt.
6.Add the chicken and juices back to pan, skin side up, and sprinkle with parsley.
7. Let simmer for 2-3 minutes and serve.
