Black Bean and Walnut Tacos

These Black Bean Walnut Tacos put a nutritious twist on a favorite. Black Bean and Walnut Tacos

Ingredients
8 soft taco shells
1 cup shredded cheese
1 (15 oz.) can black beans, drained and rinsed
1 cup walnuts, finely chopped
1 jalapeño, diced
1 tomato, diced
½ red onion, finely diced
1 tsp. paprika
1 tsp. cumin
½ tsp. smoked paprika
½ tsp. salt
½ tsp. black pepper
Olive oil

Steps
1) Heat about 2 tablespoons of olive oil in a skillet over medium heat. Add the onion, jalapeño and tomato. Sauté for 7–8 minutes, until softened.
2) Add the black beans, walnuts and seasonings. Cook for another 5–7 minutes, stirring occasionally. Adjust seasoning to taste.
3) Spoon the filling onto one half of each tortilla. Top with shredded cheese and fold.
4) Heat a small amount of olive oil in the skillet over medium-high heat. Cook the tacos in batches for about 2 minutes per side, until golden and crisp.
5) Serve with avocado, cilantro, salsa, hot sauce, sour cream or Greek yogurt.
