Garlic Parmesan Mashed Cauliflower
Ingredients
9 Cloves Garlic, smashed
1 tsp. Olive Oil
1 Cup Chicken Broth
1 Large Head Cauliflower
1/2 tsp. Dried Thyme
1/2 tsp. Dried Rosemary
1/2 Cup Parmesan, shredded
Salt to taste
Steps
- Add oil to a large pot over medium heat.
- Once the oil is hot, add the garlic and stir for 1-2 minutes.
- Add the chicken broth, cauliflower, dried thyme, and dried rosemary. Cover with lid and cook until cauliflower is tender.
- Remove from heat and blend with immersion blender or food processor until smooth.
- Once blended smooth, stir in parmesan and adjust salt to your liking.
