Garlic Parmesan Mashed Cauliflower

One of our favorite and versatile veggies takes center stage in another recipe! This garlic parmesan cauliflower mash is going to become a go-to side in future meals. The classic flavor combo of garlic and parmesan transforms your cauliflower into a familiar and cozy dish.

Nutritionally, cauliflower is lighter in calories and carbs than potatoes. It contains a high amount of fiber, which is important for digestive health.

Garlic Parmesan Mashed Cauliflower

Ingredients
9 Cloves Garlic, smashed
1 tsp. Olive Oil
1 Cup Chicken Broth
1 Large Head Cauliflower
1/2 tsp. Dried Thyme
1/2 tsp. Dried Rosemary
1/2 Cup Parmesan, shredded
Salt to taste

 

Steps

  1.  Add oil to a large pot over medium heat.
  2. Once the oil is hot, add the garlic and stir for 1-2 minutes.
  3. Add the chicken broth, cauliflower, dried thyme, and dried rosemary. Cover with lid and cook until cauliflower is tender.
  4. Remove from heat and blend with immersion blender or food processor until smooth.
  5. Once blended smooth, stir in parmesan and adjust salt to your liking.
