Jicama, Mango, Citrus Salad

Jicama, pronounced HEE-kah-mah, is sometimes referred to as yam bean, Mexican turnip, or Mexican potato. It’s an edible root vegetable native to Mexico. The flavor is sweet and starchy, think of a cross between a water chestnut and an apple. Jicama is a fantastic aid for digestion, it contains a prebiotic called inulin, which is great for assisting in gut health. Jicama is also rich in fiber and potassium, along with vitamins C and A. It’s naturally low in calories, but since it’s starchy with a pleasing snap, it makes a great, low-carb substitute for chips or other snack foods.

Add freshness to your next meal with this fantastic salad. Enjoy it by itself, as a side dish, or add some crunch to the top of a taco.

Jicama, Mango, Citrus Salad

Ingredients

2 Fresh Limes
1 tsp Kosher Salt
1/2 Red Onion
1 Dash of Tabasco
1 Fresh Mango
2 Tbsp Fresh Cilantro
2 Cups Fresh Jicama
Serving Size: 1/2 Cup
Yield: 6 Servings

Steps

1) In a medium bowl, combine lime juice, salt, and tabasco. Whisk to combine. Add thinly sliced red onion and allow to marinate while you prep the jicama and mango.
2) Add prepared jicama, mango, and cilantro to the bowl and toss to combine. Allow to rest in the refrigerator 2 hours before serving.
3) Serve chilled. Goes well with tacos, grilled, chicken and fish, and BBQ pork.
