Miso Quinoa Pilaf Raw Bowl

We all need a little freshness in our lives and this raw bowl offers just that. The crisp, fresh vegetables combined with the delicious tahini honey lemon dressing compliments the texture of the quinoa. Speaking of quinoa (pronounced KEEN-wah), this grain has gained popularity as a healthy food with good reason. Quinoa is a great source of protein, fiber, and healthy fats. It promotes a healthy gut as well as assists in regulating blood sugar levels. Miso Quinoa Pilaf

4 Cups Water
2 Cups Quinoa
5 Tbsp. White Miso Paste

  1. In a saucepan, bring water to a boil and add miso paste.
  2. Add Quinoa, stir on high for 5 mins.
  3. Reduce to medium-high, keeping a rolling boil for another 10 mins., when the quinoa seed breaks and starts to “bloom” place on low-medium heat and cover for an additional 10 mins.
  4. Fluff with a fork.

 

Tahini Honey Lemon Dressing

1/3 Cup White Miso Paste
1/3 Cup Tahini
1/3 Cup Honey
1/3 Cup Lemon
2/3 Cup Water

  1. Mix all ingredients until well incorporated.

 

Raw Bowl Assembly

8 Cups Miso Quinoa Pilaf
4 Cups Carrots, julienned
3 Cups Snow Peas, cut on the bias
2 Avocados, quartered and sliced
3 Cucumbers, sliced
3 Cups Grape Tomato
8 Radishes, fine julienned
1/2 Cup Red Onion, fine julienned
8 Lemons, sliced
1 Tbsp. Sesame Seeds, toasted
16 Oz. Tahini Honey Lemon Dressing
Yield: 8 Servings

  1. Using tongs or spoons, assemble/toss ingredients, serve and enjoy!
