Sweet and Spicy Sweet Potatoes

It’s sweet potato season! Sweet potatoes are a highly nutritious food that offers many health benefits like promoting gut health, support healthy vision, strengthening the immune system. Sweet potatoes may even enhance brain function! It’s very easy to incorporate these fiber-rich sources of beta-carotene into your diet. Try using a sweet potato puree in your baked goods to add moisture without adding fat.

Helpful Tip:  Avoid storing sweet potatoes in the refrigerator, which will produce a hard center and unpleasant taste. Instead, store your sweet potatoes in a cool, dry, well-ventilated container. For best results, store them in a basement or root cellar away from strong heat sources. Sweet potatoes can be stored for up to two weeks.

 

Sweet and Spicy Sweet Potatoes

 

Ingredients

2 Large Sweet Potatoes
3 Tbsp Olive Oil
2 tsp Packed Brown Sugar
1 1/2 Tbsp Paprika
1/2 tsp Black Pepper
1/2 tsp Onion Powder
1/2 tsp Garlic Powder
1/2 tsp Chili Powder
1 Pinch Cayenne Pepper

 

Steps

  1. Preheat oven to 425 degrees F.
  2. Place the sweet potato chunks into a large mixing bowl. Drizzle with the olive oil, then sprinkle the brown sugar, paprika, black pepper, onion powder, garlic powder, chili powder, and cayenne pepper over top. Toss until the potatoes are evenly coated with the seasoning. Spread onto a baking sheet.
  3. Bake in the preheated oven for 15 minutes, then turn the potatoes over with a spatula and continue baking until the sweet potatoes are golden and tender, 10 to 15 minutes more.
