Candied Bacon with Mango
Ingredients
1 Cup Sugar
1 Cup Red Wine Vinegar
1 Large, Ripe Mango
1 Tbsp Honey
Ground Black Pepper
1 Pound Thick Cut Bacon
Steps
- Preheat oven to 375°F. Cover a baking sheet with aluminum foil and line foil with parchment paper. Peel, pit and coarsely chop the mango.
- Place sugar and vinegar in a large saucepan and cook until the sugar is melted and it begins to boil. Add mango and cook until mango is soft, about 10 minutes. Cool slightly.
- Puree mango mixture until smooth. Pour into a bowl and stir in the honey. Season with a dusting of salt and pepper. Bring to room temperature before using.
- Place 6 to 8 slices of bacon on the prepared baking sheet and brush some glaze on both sides of each slice.
- Bake the bacon slices for about 12 minutes. Remove from oven, brush slices with more glaze and turn them over, brushing with more glaze. Repeat 3 more times, for 6 minutes each time.
- Remove slices immediately from sheet onto a new piece of parchment paper to cool.
- Repeat with the remainder of the bacon.
- Store cooked bacon in single layers, separated by parchment, in a container, in the refrigerator.
