To celebrate National Nutrition Month, our latest Friends and Family Recipe is Oat Milk Chocolate Pudding!

Plant-based milk has become extremely popular in recent years. Oat milk is a great choice for those with allergies or intolerances. It contains calcium, fiber, potassium, iron, and phosphorus. The vitamin A and D found in oat milk can help your immune system fight off infection and improve overall resiliency too.

Decreasing animal products in your diet may lower cholesterol, reducing the risk of heart attack and stroke. Oat milk contains ZERO cholesterol but does have a soluble fiber called beta-glucans. Beta-glucans help lower cholesterol in your gut and daily consumption of oat milk has been shown to lower cholesterol by three to five percent.

Oat Milk Chocolate Pudding

Ingredients:

1/2 Cup Granulated Sugar
1/4 Cup Unsweetened Cocoa Powder
1/8 tsp Kosher Salt
2 Tbsp Cornstarch
2 Cup Oat Milk
3 Oz Baking Chocolate (54.5% Cocoa)

Steps:

1) Combine sugar, cocoa, and cornstarch in a medium sauce pan. Whisk to combine.
2) Slowly add oat milk, whisking to break up any chunks.
3) Warm over medium heat, stirring constantly. Bring to a low boil.
4) Cook until thickened, approx. 3-5 minutes. Pudding will thicken as it cools.
5) Remove from heat. Add chocolate and stir until melted and mixed. Optional: add a shot of espresso.
6) Pour into a heat-safe container and chill in the refrigerator, 2-4 hours, before serving.
