Raspberry Poppyseed Antioxidant Arugula Salad

Ingredients
Raspberry Poppyseed Dressing
6 tbsp red wine vinegar
3 tbsp maple syrup
1 tsp salt
1 tsp ground mustard
½ cup avocado oil
1 cup fresh or frozen raspberries, thawed
1 tsp poppy seeds
1 dragonfruit, cubed

Salad
4–6 cups arugula
1 cup raspberries
1 cup strawberries, sliced
2 kiwis, sliced
½ cup blueberries
½ cup blackberries
2 tbsp roasted, salted pepitas

Steps
Making the Dressing
1) Add the vinegar, maple syrup, salt, mustard, avocado oil, raspberries, and dragonfruit to a blender.
2) Blend until smooth, about 10 seconds.
3) Add the poppy seeds and pulse once or twice to combine.
4) Refrigerate in an airtight container for up to 7 days.
Assemble the Salad
1) Combine the arugula, raspberries, strawberries, kiwi, blueberries, blackberries, and pepitas in a large bowl.
2) Drizzle with the raspberry poppyseed dressing.
3) Toss gently to coat and serve immediately.
